Ingredients

Wet
1 cup warm milk (110–115°F)
½ cup (1 stick) unsalted butter, melted & cooled
1 large egg
3 tablespoons sugar
Dry
3½ cups all-purpose flour
2¼ teaspoons instant yeast (1 packet)
1 teaspoon salt
Finishing
4 tablespoons melted butter (for brushing)
Flaky salt (optional)
Preparation
1. Mix the wet ingredients
In a large bowl or stand mixer, whisk together:
Warm milk
Melted butter (½ cup)
Egg
Sugar (3 tbsp)
2. Add the dry ingredients
Add:
Flour (3½ cups)
Yeast
Salt
Mix on low, then knead 6–8 minutes until smooth, soft, and buttery.
This dough is rich — it will feel stretchy and slightly heavier than your standard roll dough.
3. First rise
Place dough in a greased bowl, cover, and rise:
👉 1 to 1½ hours, until doubled.
4. Shape the Parker House fold
Roll dough into a rectangle, about ½ inch thick.
Cut into 12 rectangles (3x4 grid).
Brush with melted butter.
Fold each piece almost in half, leaving a little lip.
Place in a buttered or lined baking pan.
They should look like clamshells — perfect.
5. Second rise
Let rise 20–30 minutes, until puffy.
6. Bake
Bake at 350°F for:
👉 18–20 minutes, until lightly golden.
This richer dough browns more slowly — that’s normal.
7. Finish
Brush immediately with melted butter
Add flaky salt if desired
