Soft, buttery, and perfectly layered with sweet cinnamon filling, this babka is part bread, part dessert, and fully irresistible. Ingredients
3/4 cup (180ml) warm milk
2 1/4 tsp (1 packet) active dry yeast
1/4 cup (50g) sugar
3 1/4 cups (410g) all-purpose flour
2 large eggs
1/2 cup (115g) unsalted butter, softened
1 tsp salt
For the filling: 1/2 cup (100g) brown sugar, 1 tbsp cinnamon, 1/4 cup (60g) melted butter
For the glaze: 1/4 cup (60ml) simple syrup or honey (optional)
Preparation
Activate yeast in warm milk with 1 tsp sugar. Let stand 10 minutes.
In a large bowl, mix flour, remaining sugar, salt, eggs, and yeast mixture. Knead in butter until smooth (8–10 minutes).
Let rise in a greased bowl until doubled, about 1.5 hours.
Roll dough into a rectangle (about 10x14 inches / 25x35cm). Spread filling evenly, roll tightly, then slice lengthwise and twist strands together.
Place in a greased loaf pan, cover, and let rise 45–60 minutes.
Bake at 350°F (175°C) for 30–35 minutes. Brush with simple syrup for shine while warm.
