Ingredients

For the Muffins:

·       2 cups (250 g) all-purpose flour

·       ½ cup (100 g) granulated sugar

·       2 tsp baking powder

·       ½ tsp baking soda

·       ½ tsp salt

·       1 cup (240 ml) buttermilk (or milk + 1 tsp vinegar/lemon juice)

·       ⅓ cup (75 g) unsalted butter, melted

·       2 large eggs

·       2 tsp vanilla extract


For the Cinnamon Swirl:

·       ½ cup (100 g) brown sugar, packed

·       2 tsp ground cinnamon

·       3 tbsp unsalted butter, melted

For the Cream Cheese Glaze:

·       4 oz (115 g) cream cheese, softened

·       ½ cup (60 g) powdered sugar

·       2–3 tbsp milk

·       ½ tsp vanilla extract

Preparation

Step 1: Prep


  • Preheat oven to 375°F (190°C).

  • Line a muffin tin with 12 liners.


Step 2: Make Muffin Batter


  • Whisk together flour, sugar, baking powder, baking soda, and salt.

  • In another bowl, mix buttermilk, melted butter, eggs, and vanilla.

  • Fold wet into dry until just combined.


Step 3: Make Cinnamon Swirl


  • Mix brown sugar, cinnamon, and melted butter into a paste.


Step 4: Assemble Muffins


  • Spoon a little muffin batter into each cup (about 1 tbsp).

  • Add 1 tsp cinnamon swirl.

  • Add more batter to fill ¾ full, then swirl a bit of cinnamon mix on top with a toothpick for that marbled look.


Step 5: Bake


  • Bake 18–22 minutes, until golden and a toothpick comes out clean.


Step 6: Glaze


  • Beat cream cheese, powdered sugar, milk, and vanilla until smooth.
