Ingredients
• 1 ½ cups all-purpose flour
• 1 tsp baking powder
• 1 tsp baking soda
• ½ tsp salt
• 3 large ripe bananas, mashed
• ¾ cup sugar (or ½ cup brown sugar for richer flavor)
• 1 egg, lightly beaten
• ⅓ cup melted butter (or neutral oil)
• 1 tsp vanilla extract
• ¾ cup chocolate chips (semi-sweet or milk)
Preparation
• Preheat oven to 350°F (175°C). Line or grease a 12-cup muffin tin.
• In a bowl, whisk together flour, baking powder, baking soda, and salt.
• In another bowl, mash bananas and mix in sugar, egg, melted butter, and vanilla until smooth.
• Fold dry ingredients into wet, mixing gently (don’t overmix).
• Stir in chocolate chips.
• Divide batter evenly into muffin cups (about ¾ full).
• Bake 18–22 minutes, or until a toothpick comes out clean (a little melted chocolate is okay!).
• Cool slightly before enjoying.
