Ingredients
· 1 cup unsalted butter, softened
· 1 cup light brown sugar, packed
· ½ cup granulated sugar
· 2 large eggs
· 2 tsp vanilla extract
· 3 cups all-purpose flour
· 1 tsp baking soda
· 1 tsp baking powder
· 1 tsp cinnamon
· ½ tsp nutmeg
· ½ tsp salt
· 1½ cups finely diced fresh apple (peeled, if you like)
· 1 cup chocolate chips, chopped pecans, or walnuts (optional)
Glaze (optional but delicious):
· 1 cup powdered sugar
· 2–3 tbsp apple cider or milk
· Pinch of cinnamon
Preparation
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. Cream butter and sugars together until fluffy. Beat in eggs and vanilla.
3. In another bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gradually mix into wet ingredients.
4. Gently fold in diced apples (and chocolate chips and/or nuts, if using). Dough will be soft.
5. Chill 30 minutes minimum
6. Drop heaping tablespoons onto baking sheet, spacing 2 inches apart.
7. Bake 14–18 minutes, until edges are golden and centers set.
8. Cool slightly, then drizzle with glaze if desired.
